The company La Cava S.r.l. is a cheese factory located in Sicily, within three natural parks: Etna Park, Nebrodi Mountains Park and Alcantara River Park, in the characteristic medieval town of Randazzo. It was established in 1970 by Carmelo La Cava, the son of master cheesemakers for several generations. Over the years, the company has grown and is now managed together with sons Nino and Rosita, professionals who accompany him in running the business with competence and skill. Over 4 million litres of milk are processed at La Cava every year, 100% Sicilian milk supplied by breeders who graze their animals freely and traditionally, and where animal welfare and respect for nature’s cycles are primary values. Over the years, a strong and valuable network of breeders has been created, very important for the development of the territory and for creating a quality product. At Caseificio La Cava, tradition is combined with innovation: all the recipes are those of the past, but the production processes are highly technological and follow high safety standards. In fact, we are BRC and IFS certified. The result is a healthy, genuine and safe product.
At Caseificio La Cava, every day we work with passion and expertise to create a basket of over 40 products:
– Pecorini and canestrati, typical traditional Sicilian cheeses, classic and enriched with tasty ingredients such as chilli pepper, pistachio, walnuts, almonds, olives, rocket, etc;
– Ricottas, queens of the Sicilian table, fresh, seasoned salted, and baked. A special ricotta is the sweetened one, ideal for cakes and cannoli, a traditional Sicilian pastry product;
– Paste filate such as provole (fresh and seasoned) and mozzarella. These products are never lacking in typical Sicilian cuisine;
– Free Form cheeses (caciotta and ricotta) for the lactose intolerant.
