Pastifio Delfino is a pasta factory situated in Italy, it produce fresh pasta, cold-store. The history of the pasta factory dates back to the early 1900s.

Gerolamo Delfino, at the beginning of the twentieth century ( around 1925), opened a mill with a laboratory of dried pasta, in Liguria, in the North West of Italy.

After the Second World Word, Gerolamo’s son, Giuseppe and his wife Angela, moved the Pastificio to Bor- ghetto Santo Spirito, a small town located on the “Riviera dei Fiori “ (near Savona). They decided to change the production from dried pasta to fresh pasta.

In this small town they also opened a store point and a deli wih their products.

Giuseppe and Angela’s sons, Paolo and Gerolamo, grandsons of the founder, in the 1980s changed the com- pany from producing dry pasta to fresh, cold-stored pasta.

Now Matteo, the great-grandson, continues, with the same care and the same love, the production of ravioli, tagliatelle, pansotti, savory pies and many other products created with passion and inspiration.

Our products, elaborated with innovation and passion, today include cold-preserved fresh pasta, savory pies, stuffed vegetables and pesto.

To understand the quality, we produce the Basil Pesto, made with the first choice cut of Organic Basil, grown 3 km from our production site. It is processed 15 minutes after cutting, which comes early in the morning. For its composition we used whole Mediterranean pine nuts, Pecorino Romano DOP, Grana Padano DOP, Italian and European Extra Virgin Olive Oil.

The careful research towards the quality of raw materials has led to a selection of producers, always oriented towards local companies or allowing the creation of a synergy to the company and this has allowed to create a synergy and collaboration with the activities of the territory, maintain a product quality
