MOLINO SUL CLITUNNO is an Italian mill that produces exclusively high quality soft wheat flours for pizza, bakery, pastry and fresh pasta.
The different types of grain are milled separately and then blended at a later stage, in order to keep a constant level of quality in the various types of flour we produce. Like few other mills, we grind grains that are selected and analyzed before, during and after the milling process, using state-of-the-art mixing technologies.
Our wide range of flours includes different lines dedicated to all types of professional production. Our company has also developed a new line of flour, called ORO PURO, produced with 100% ISO 220005 certified grains, grown exclusively in the Italian region of Emilia Romagna.
The grains used for these flours are subjected to a strict quality control, from the moment of sowing, through maturation to harvesting and subsequent storage.
We also have a well-equipped analysis laboratory for internal quality control, using Brabender (amylogram and extensograph), Chopin and Buhler machines and a professional training academy, adjacent to the plant, in which we constantly organise courses and training for pizza makers, bakers and pastry chefs with the qualified collaboration of our Masters of White Art.
Our company is BRC, IFS and Halal certified, moreover in our production processes the H.A.C.C.P. principles are applied, in compliance with the EC Reg. n° 852/04 of 29.04.04 (2004/41/CE directives plan is available at our premises).
